Vegetable Lentils Flatbread
Ingredients:

1 cup sweet potato strips

½ cup Zucchini strips

4 stalks chopped scallion

¼ cup sliced bell pepper (red or yellow)

1 small onion, sliced thinly

1 tsp. Himalayan sea salt
Herbs of your choice

¾ cup Oats or Spelt flour
-
1 cup water
-
½ cup Red Lentils
Directions:
In a bowl, place the potato strips, zucchini strips, scallion, bell pepper, onion, salt and herbs
Next pour water, flour and red lentils into a blender, blend until well combined – pour the mixture into the bowl with the vegetables and coat well using a spoon. Pour the vegetables mixture on a baking sheet covered with parchment paper (or a greased stainless steel or glass baking flat dish). Bake at 325 degrees f. for 40 minutes
