Vegetable Lentils Flatbread


  • 1 cup sweet potato strips

  • ½ cup Zucchini strips

  • 4 stalks chopped scallion

  • ¼ cup sliced bell pepper (red or yellow)

  • 1 small onion, sliced thinly

  • 1 tsp. Himalayan sea salt

Herbs of your choice

  • ¾ cup Oats or Spelt flour

  • 1 cup water

  • ½ cup Red Lentils


In a bowl, place the potato strips, zucchini strips, scallion, bell pepper, onion, salt and herbs

Next pour water, flour and red lentils into a blender, blend until well combined – pour the mixture into the bowl with the vegetables and coat well using a spoon. Pour the vegetables mixture on a baking sheet covered with parchment paper (or a greased stainless steel or glass baking flat dish). Bake at 325 degrees f. for 40 minutes
