Irish Potato Vegetable Patties
Ingredients:

½ cup grated Zucchini

½ cup grated Carrot

1 cup grated Irish Potato

4 Tbsps. Oats flour

2 Tbsps. Flaxseed meal

½ tsp. sea salt

4 Tbsps. Hot water

Herbs of your choice: garlic, onion, scallion, dill, sage, coriander, parsley etc

2 Tbsps. Coconut oil
Directions:
Place all the grated vegetables in a bowl, next add in the coconut oil and water, then add in the flaxseed meal, salt and herbs – mix with a fork. Then use a spoon a scoop out the amount to make a ball, flatten with the fork and layer the patties on a baking sheet lined with parchment paper. Bake at 300 degrees f. for 35 minutes – enjoy!
