• 6 large sweet potatoes (washed and peeled)
• ¼ cup cold pressed coconut oil
• 2 oranges (peeled)
• ¼ cup raw honey
• ¾ cup orange juice



Steam sweet potatoes in a steamer or pot for 10 minutes, removed and slice. Arrange a layer in a greased casserole dish.  Cover with a layer of thinly sliced oranges. Repeat the layers until ingredients are finished. Mix together the honey and orange juice with the ginger and add the coconut oil. Pour mixture over the potatoes and orange slices. Cover the casserole and bake in moderate oven for 20 minutes. Remove cover for the last 5 minutes to crisp the top.
